Meat Muffins

I’m always on a quest for new recipes & healthy recipes. It helps if it’s a recipe that I can hide veggies in. My kids are SUPER picky and won’t eat any fruits or vegetables if they can see them. For example, the REFUSE to eat cauliflower. Well, I mashed up some cauliflower and mixed it in with our spaghetti sauce the other day & they had NO clue.

So, I had a co-worker share this recipe with me the other day, so I made it for dinner last night. DELICIOUS! He calls them meatballs, I call them meat muffins, because I think it’s more  fun.

1 lb Jenny O Ground Turkey ( I use 93% LEAN)
1 1/8 cup Kraft shredded cheddar cheese Fat Free
1 ½ Gala Apple (Medium) diced
1 Tablespoon Agave Syrup
2 medium Eggs
1 packet Oatfit Maple and Brown Sugar oatmeal
½ tablespoon McCormick Brown Sugar Bourbon seasoning

Preheat the oven with the rack in the center to 375*. In a medium mixing bowl combine all of the ingredients minus 1/8 cup of the shredded cheese. I prefer to use my hands so I can tell when it is consistently combined. Lightly spray a cupcake pan with a “light” cooking spray. Divide the mixture into 11 equal potions formed into balls and placed in the pan. These balls are about a ¼ cup each. I fill the empty spot in the pan with water to help even out the heat.

Place the pan in the oven and cook for approximately 35 minutes.

Carefully remove the pan when they are done and sprinkle the meatballs with the rest of the cheese. Let cool and enjoy.

The hardest part of this recipe is not eating the entire batch by yourself. 🙂 Just the facts:

I didn’t have all the exact ingredients. Instead of agave syrup, I just used pure maple syrup and instead of brown sugar  bourbon seasoning, I used a dry rub that I had in my pantry. Oh, and instead of chopping up the apple, I grated it up. I was afraid if there were chunks of apple, the kids would notice it and throw a fit. I think next time I’ll try chunking up the apple, or just using apple sauce. I was REALLY hoping for leftovers to bring for lunch today, but my husband and 11 month old scarfed up the rest.

Clean Eating

My friend & her husband over at Finding My Happy Pace have recently gone vegan. Before I was reading her posts, I’ve thought about trying to go vegetarian, but I’ve been intimidated about it. What really got me interested is when Steena said that she felt like she had more energy and could even run faster by going vegan.

When she said that, it made me really think. I’ll admit, I try my hardest to eat healthy, but for me it’s really hard when I burn so many calories by working out and I need to replace those calories, you know? Plus, my family doesn’t eat very clean or healthy.

Well, I’m moving out on February 1st. I’m SUPER excited. When I move out, I want to focus more on eating cleaner and even healthier than I am right now. But…for me it’s super intimidating. One day while I was browsing Pinterest though, I found this site about Clean Eating and it gives me a little bit more of an insight. I think it’ll be a good resource.

I don’t know if I could ever go vegan because I LOVE cheese and I LOVE ice cream, but I would be willing to experiment with vegetarianism, etc.

What are your views on clean eating?

Processed Foods

Within the past 2 days, when I’ve been running, my left foot has been falling asleep and getting all tingly. At first I thought it was because my new shoe laces were too tight, so tonight I loosened them, but it was still happening.

I talked to my dad about it and he said that maybe I’m retaining water. How does one retain water? They eat ALOT of sodium, and guess what? I eat ALOT of sodium. Monday – Friday, 2 out of 3 of the meals I eat every day are usually frozen meals/processed foods. Processed foods tend to have alot of sodium in them. I eat ALOT of cheese too.

I’ve eaten these processed foods like this every day since I started my weight loss/triathlon journey. I want to cut back on eating so many processed foods, but it scares me. Alot of people say that I should eat more home cooked meals, and I agree, but the thing is, I live at home with my mom and dad and they don’t always tend to eat healthy. I honestly wouldn’t feel comfortable eating what they eat, and that’s why I’ve eaten so many processed foods.

I’m not sure how to go about eating less processed foods. I don’t have time when I get home from work to cook my own meal. I eat lunch and dinner at work so that as soon as I get home from work around 6:00 p.m., I can get right in to my workout.

Do you have any suggestions for me?

Eating Out

This kind of has to do with my previous post of “I Need to Eat More”. I’m such a foodie. I LOVE food. I love healthy food, I love food that isn’t good for you. I love sweet, salty, I just love food. Honestly, there is still a fat girl hiding inside me.

Earlier this week, I called home while I was at work. I was bored. First thing out of my mouth when I call home is “What are you doing?” I don’t know why. It just is. I guess that’s my way of starting a conversation. My dad answered with “Eating dinner.” So naturally I asked “What are you eating?” They had gone to a local restaurant and got burgers & fries for dinner. The night before, they’d go to Little Ceasar’s and got one of their $5 pizza’s and crazy bread.

For some reason, it really struck a chord with me and made me mad at my parents for eating out twice that week so far. It hurt my feelings. I had a Smart Ones sitting in the freezer at work ready to be warmed up for dinner. I actually got mad at my dad on the phone and hung up on him. I believe some of my words were “That’s not fair! Do you know how long it’s been since I’ve had a cheeseburger and fries?” His response was “Who’s fault is that?”

You see, my parents don’t get the “eating healthy” thing. Even though I’ve been doing this for 3 years, they just don’t get it. I’m not sure if they ever will. My dad is 100+ lbs over weight and my mom is at least 50 lbs over weight. When I ask them if they want to go to the gym with me, their excuses crack me up. I think part of the reason they crack me up is because I’ve used those excuses before.

Anywho, it just feels like they’re rubbing it in when they go out to eat. They know how bad I would LOVE to have a big juicy burger and fries right now. I’ve actually been talking with my dad about it. But, like I said in my previous post about food, even if it were on my “cheat” day, if I were to go out for a burger and fries/onion rings, I would feel SO guilty.

I would’ve been better off if they would’ve lied to me when they told me what they had for dinner. Tell me you had a salad or something. It just hurts when they eat that kind of food and here I am struggling to eat healthy. Even though I’ve been doing this for 3 years, some days are better than others and I still have a hard time with what I put in my mouth.
